Ingredients
1/2 tablespoon of olive oil
1/2 pound of andouille or other smoked sausage, coarsely chopped
4 slices of bacon, chopped
1/4 cup of onion, chopped
1/4 cup of green bell pepper, chopped
1/4 cup of celery, chopped
1 clove of garlic, minced
1/2 teaspoon of dried basil
1/2 teaspoon of Cajun seasoning (like Slap Ya Mama), or to taste, optional
1/4 teaspoon of freshly cracked black pepper, or to taste
1 bay leaf
2 (16 ounce) cans of Blue Runner red kidney beans, undrained
1 (16 ounce) can of Blue Runner Creole cream style red beans
2 to 3 cups of chicken broth, as needed

Instructions
Heat olive oil in a large, heavy bottomed skillet or pot, over medium high heat, add the smoked sausage and cook until browned. Remove the sausage with a slotted spoon, and set aside.
In the same skillet, add the bacon and cook until soft, but not browned. Add the onion, green bell pepper and celery, cook until soft. Add the garlic, basil, Cajun seasoning, pepper, and bay leaf. Stir in the beans and enough of the chicken broth to reach the consistency desired; bring to a boil. Add the sausage.
Reduce heat and simmer, uncovered, about 15 to 20 minutes, or until cooked through, and slightly reduced and thickened. Serve as a main dish over hot, cooked rice with a mixed garden salad or green veggie, or as a side dish with meat and a veggie.

~Cook's Notes~
DO NOT ADD SALT! Canned beans contain plenty of sodium, so you likely will not need to add in salt. At the end of cooking, taste and adjust. If you are watching sodium, rinse the beans well, and use lower sodium chicken broth, adding in a bit more if necessary. If Blue Runner brand canned beans are not available in your area, substitute a canned regular light kidney bean, mashing one can. Can substitute leftover ham for the sausage, or use both ham and sausage.

~ Buttermilk Biscuits

Buttermilk biscuits are made with wholesome ingredients, including flour, buttermilk and sugar. They contain zero grams Trans fat, no high fructose corn syrup and no artificial colors or flavors. So you can feel good about serving your family the warm and flaky biscuits they love.

Ingredients: Serves 10
1/2 cup shortening
2 cups all-purpose flour
1 tablespoon sugar
2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
3/4 cup buttermilk (about)Preparation Method:
Heat oven to 230°C (450°F/Gas8). Cut shortening into flour, sugar, baking powder, salt and baking soda with pastry blender in large bowl until mixture resembles fine crumbs. Stir in just enough buttermilk so dough leaves side of bowl and forms a ball.

Turn dough onto lightly floured surface; gently roll in flour to coat. Knead lightly 10 times. Roll or pat 1/2 inch thick. Cut with floured 2 1/2-inch biscuit cutter. Place about 1 inch apart on ungreased cookie sheet.

Bake 10 to 15 minutes.

~ SKILLET BUTTERMILK BISCUITS {The most flaky, mile-high, buttery biscuits ever! Requires only 6 ingredients and baked in a skillet in under 45 minutes!} - yield: 12 BISCUITS, prep time: 25 MINUTES, cook time: 20 MINUTES, total time: 45 MINUTES.


INGREDIENTS:

4 cups all-purpose flour
4 teaspoons baking powder
1 1/4 teaspoons kosher salt
1 teaspoon baking soda
3/4 cup unsalted butter, frozen
1 3/4 cups buttermilk

DIRECTIONS:
Preheat oven to 450 degrees F. Lightly oil a 10 1/2- inch square cast iron skillet or coat with nonstick spray.

1.) In a large bowl, combine flour, baking powder, salt and baking soda.

2.) Grate butter using the large holes of a box grater. Stir into the flour mixture.

3.) Add buttermilk and stir using a rubber spatula until a soft dough forms.

4.) Working on a lightly floured surface, knead the dough 3-4 times until it comes together.

5.) Using a rolling pin, roll the dough into a 9-inch square, trimming the edges to create an 8-inch square.

6.) Using a sharp knife, cut dough into 9 or 12 square biscuits.

7.) Place biscuits onto the prepared cast iron skillet.

8.) Place into oven and bake for 16-19 minutes, or until golden brown.

9.) Serve warm.

Idea ~ eye remember My! Mama used to have a square iron skillet ~

Super Spaghetti Sauce in Crockpot,wow!

2 lbs.of hamburger

2 large onions, chopped

2 cups of canned mushrooms (6 oz each)

1 tsp.garlic powder

1 28 oz can of diced tomatoes, undrained

2 cans tomato sauce 15oz.each

1 6 oz can of tomato paste

1 tablespoon dried basil leaves

1 teaspoon dried oregano leaves

1 tablespoon sugar


Spray crockpot with cooking spray. In a skillet, cook hamburger, onions, mushrooms and garlic over medium heat about 10 minutes or until meat is done, stirring occasionally, drain.

Poor hamburger mixture into crockpot. Stir in remaining ingredients. Cover and cook on Low heat setting 8 to 9 hours.

Idea just put bell pepper in it and leave the mushroom out...

Sugar helps to cut the acidity, could always add sugar to tomato sauce { sugar cuts the acid in the tomatoes and balances out the oregano and basil and you can throw fresh mushrooms in}

You may never fry chicken again after tasting this baked crispy chicken.

Crispy Cheddar Chicken

2 lbs chicken tenders or 4 large chicken breasts
2 sleeves Ritz crackers
1/4 teaspoons salt
1/8 teaspoon pepper
1/2 cup whole milk
3 cups cheddar cheese, grated
1 teaspoon dried parsley

Sauce:
1 10 ounce can cream of chicken soup
2 tablespoon sour cream
2 tablespoon butter

Crush crackers. If using chicken breasts and not tenders, cut each chicken breast into 3 large pieces. Pour the milk, cheese and cracker crumbs into 3 separate small pans. Toss the salt and pepper into the cracker crumbs and stir the mixture around to combine. Dip each piece of chicken into the milk and then the cheese. Press the cheese into the chicken with your fingers. Then press the cheesy coated chicken into the cracker crumbs and press it in.

Spray a 9×13 pan with cooking spray and lay the chicken inside the pan. Sprinkle the dried parsley over the chicken. Cover the pan with tin foil and bake at 400 degrees for 35 minutes. Remove the tin foil, bake for an additional 10-15 minutes, or until the edges of the chicken are golden brown and crispy.

In a medium sized sauce pan combine the cream of chicken soup, sour cream and butter with a whisk. Stir it over medium high heat until the sauce is nice and hot. Serve over the chicken.

Idea Sometimes for a different taste use ranch dressing instead of milk to dip chicken in.

~ Mini Pot Pies

4 cans of small biscuits-10 count-store brand works great
2 cups cooked chicken breast, diced (canned chicken works great if you're short on time)
2 10.5 oz cans cream of chicken soup
2 10.5 oz cans cream of mushroom soup
1 2/3 cup shredded low-fat cheddar cheese
2 cups of frozen mixed vegetables
2 tsp oregano

Preheat oven to 350F. Separate biscuits and place each biscuit in a cup of a lightly greased 12-count muffin pan, pressing dough up sides to edge of cup. In a medium bowl, combine chicken, chicken soup, vegetables, 1 cup cheddar cheese, and oregano. Mix well. Spoon chicken mixture into prepared biscuit cups. Top with remaining 2/3 cup of cheddar. Bake for 12-15 minutes or until golden brown. Remove from oven. Place pan on a wire rack and allow to cool for 2-3 minutes. Serve.

~ Ingredients:

1/4 cup plus 2/3 cup sugar

1/4 cup fresh lemon juice

1/4 teaspoon almond extract

1 premade angel food cake, cut into 1-inch slices

1 pound cream cheese, at room temperature

2 cups heavy cream, at room temperature

2 pints blueberries

2 pints strawberries, hulled and sliced

~ Directions:

Heat 1/4 cup sugar, the lemon juice and 1/4 cup water in a saucepan over medium-high heat, stirring, until the sugar dissolves. Remove from the heat and stir in the almond extract.

Brush both sides of each slice of cake with the syrup. Cut the slices into 1-inch cubes.

Beat the remaining 2/3 cup sugar and the cream cheese with a mixer on medium speed until smooth and light. Add the cream and beat on medium-high speed until smooth and the consistency of whipped cream.

Arrange half of the cake cubes in the bottom of a 13-cup trifle dish. Sprinkle evenly with a layer of blueberries. Dollop half of the cream mixture over the blueberries and gently spread. Top with a layer of strawberries. Layer the remaining cake cubes on top of the strawberries, then sprinkle with more blueberries and top with the remaining cream mixture. Finish with the remaining strawberries and blueberries, arranging them in a decorative pattern. Cover and refrigerate 1 hour.

~ Comfort food.

In a 9x13 pan, cut 3 chicken breasts in half, add 2 cans green beans on one side and cut up red skin potatoes on the other. Sprinkle a packet of zesty Italian dressing mix over the top. Drizzle a stick of melted butter over it. Cover it with aluminum foil and bake at 350 for 1 hour. - I would substitute olive oil for the butter. maybe Confused

~ *Apple Pie Bread* Shocked

1 can apple pie filling, mashed
1 yellow cake mix
4 eggs, slightly beaten
1 cup self rising flour
1 Tbsp cinnamon
1 medium chopped apple

Whisk all dry ingredients , add wet ingredients. Fold in apples. Pour in 2 loaf pans, greased. Sprinkle sugar and cinnamon on top. Bake in 325 oven for 35 to 45 minutes. Cool and enjoy.

~ Pasta Fagioli in the Crockpot~ just like Olive Garden

2 lbs ground beef
1 onion, chopped
3 carrots, chopped
4 stalks celery, chopped
2 (28 ounce) cans diced tomatoes, undrained
1 (16 ounce) can red kidney beans, drained
1 (16 ounce) can white kidney beans, drained
3 (10 ounce) cans beef stock
3 teaspoons oregano
2 teaspoons pepper
5 teaspoons parsley
1 teaspoon Tabasco sauce (optional)
1 (20 ounce) jar spaghetti sauce
8 ounces pasta

Directions:
Brown beef in a skillet.
Drain fat from beef and add to crock pot with everything except pasta.
Cook on low 7-8 hours or high 4-5 hours. Add pasta the last 30 minutes.
Serve with a nice crisp green salad and some garlic bread!

~ Yield: 12 servings. *Black Walnut Hummingbird Cake*

For the cake:
3 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon freshly grated nutmeg
3 large eggs, beaten
1½ cups vegetable oil
1½ teaspoons vanilla extract
1 (8-ounce) can crushed pineapple, undrained
2 cups diced bananas
1 cup chopped black walnuts

For the cream cheese frosting:
1 pound cream cheese, at room temperature
1 cup (2 sticks) butter, softened
1 pound powdered sugar, sifted
2 teaspoons vanilla extract
½ cup black walnut pieces

For the cake: Heat the oven to 350°. Grease (with shortening) and flour three 9-inch round cake pans.

Whisk together the flour, sugar, salt, baking soda, cinnamon, and nutmeg in a large bowl. Add the eggs and oil, and stir only until the dry ingredients disappear into the batter; do not beat. Stir in the vanilla, pineapple, walnuts, and bananas.
Divide the batter among the cake pans. Gently tap the pans on the counter to remove air bubbles.

Bake until a wooden pick inserted in center comes out clean, 25 to 30 minutes. Place the pans on wire racks to cool for 10 minutes. Turn out the layers and cool completely on the wire racks for 1 hour.

For the frosting: In a large bowl, beat the cream cheese and butter until smooth with an electric mixer at medium speed. Gradually add the powdered sugar, beating at low speed until light and fluffy. Quickly beat in the vanilla.

Spread 1 cup of frosting between the cake layers, stacking them as you go. (For the most attractive layer cake, place the first cake layer bottom-side up and place the final cake layer top-side up.) Spread the remaining frosting over the top and around the sides of the cake. Pat the walnuts over the top. Store refrigerated in an airtight cake carrier.

Tip: The bananas are diced, not mashed. For the best texture and flavor, use ripe bananas that are evenly freckled with brown spots.

That’s Just the Frosting on the Cake
Before frosting a cake, place a few strips of wax paper or parchment paper around the edge of the cake plate or cake stand to keep it clean. Use a soft pastry brush to lightly sweep any loose crumbs from the top and sides. Spread a very thin layer of frosting (often called the crumb coat) over the cake to set any remaining crumbs. Frost the sides and then the top. Carefully pull out the wax paper.

~ *Cranberry Brie Bites*

INGREDIENTS:
1 (8-oz.) tube crescent dough
Cooking spray, for pan
Flour, for surface
1 (8-oz.) wheel of brie
1/2 c. whole berry cranberry sauce
1/4 c. chopped pecans
6 sprigs of rosemary, cut into 1" pieces.

DIRECTIONS:
Preheat oven to 375° and grease a mini muffin tin with cooking spray. On a lightly floured surface, roll out crescent dough, and pinch together seams. Cut into 24 squares. Place squares into muffin tin slots.
Cut brie into small pieces and place inside the crescent dough. Top with a spoonful of cranberry sauce, some chopped pecans, and one little sprig of rosemary. Bake until the crescent pastry is golden, about 15 minutes.
