~ Cooking for one can be a challenge. I love my little crockettes, replaced my large one works great. Wanted to share.....

Baked Apples with Raisins

Ingredients
3 medium baking apples, washed and cored
1 tablespoon raisins
2 tablespoons granulated sugar
1/2 teaspoon cinnamon
1 tablespoon butter
1/2 cup water

Instructions
Mix raisins and sugar; fill center of apples. Sprinkle with cinnamon and dot with butter. Place in crockette. Add water.
Cover and cook for 7-9 hours.

Blueberry Biscuits Ingredients BISCUITS: 2 cups Flour 4 teaspoons baking powder 1 cup milk, cold 1/3 cup sugar 5 tablespoons of butter (cold or frozen) 1 teaspoon salt 3 ounces blueberries, fresh or dried GLAZE: 1 cup powdered sugar 1/8 cup water 1 teaspoon vanilla 1/2 teaspoon lemon juice Directions Preheat oven to 450°F. Mix salt, sugar, flour, and baking powder in a bowl. Add the super cold milk into dry ingredients and mix. As dough begins to form take each tablespoon of hardened solidified butter and break chunks off and spread evenly over dough. Fold dough, and knead, repeat until all butter is spread in chunks evenly throughout dough. Carefully fold in the blueberries. Move dough to floured cutting board and roll flat to about ¼ - ½ thick (or to desired thickness) and cut approximately 6 Blueberry Biscuits with a biscuit or cookie cutter. If you notice the butter starts to melt (hot kitchen) during this process it may be necessary to return the dough to the freezer for 10-15 minutes. Do not exceed 20, as the baking powder’s 1st stage may become inactive past that. Place in oven and bake for about 7-12 minutes. Melt 1 tablespoon of low-fat butter in the microwave, and paint finished biscuits with a pastry brush. Mix glaze ingredients in a bowl, and drizzle over Blueberry Biscuits with a fork. - Travis Bourgue from: Lydia, Louisiana.

Idea Those in the above picture did look so yummy to me, since i had all the ingredients, went ahead and baked them this morning; I decreased sugar to 1/4 cup and just used my pastry cutter to cut butter in, then added the milk.

NOW FOR THIS FAMILY RECIPE:
Rolled Biscuits
BAG OF SELF-RISING FLOUR (SOUTHERN BISCUIT FLOUR OR WHITE LILY)
PINCH OF BAKING SODA
5 TBSP. COLD BUTTER (IN THIN PIECES)
OR: 1/4 CUP CRISCO SHORTENING
2/3 – 3/4 CUP BUTTERMILK FOR FOR LIGHTER BISCUITS USE (SWEET MILK) REGULAR MILK.
Use Hand and press all flour against the sides and bottom of a large bowl. I typically use the outside of my fist. Once packed well add shortening and milk. Use hand and blend the shortening and milk together well with your fingers. Begin rotating milk/shortening mix in bowl. It will begin to loosen the flour causing it to blend in. Continue doing this while squeezing dough through fingers until it is at the right consistency. This cannot be told in a recipe, you must watch the YouTube tutorial and practice until you get it right. Watch video to see how to roll the biscuits in your hands before placing them in a greased iron skillet or bread pan.
Bake at 450 degrees until golden brown. Approx. 20-25 minutes.
Flip biscuits upside down when removing them from oven to keep from sweating on the bottom ~

~ *Strawberry Butter Bread* ~

Ingredients:
For the Bread:
3/4 cup granulated sugar
1/2 cup milk
1/2 cup oil
1 large egg
1 teaspoon vanilla extract or almond extract
2 cups all-purpose flour
2 teaspoons baking powder** (see notes)
1/4 teaspoon salt
2 cups diced strawberries
2 tablespoons all-purpose flour

For the Glaze:
2 cups powdered sugar
2 tablespoons melted butter
1/3 cup finely diced strawberries
1/2 teaspoon vanilla extract or almond extract
1-2 tablespoons heavy cream or milk** (optional)

Instructions
Preheat the oven to 350 degrees.
In a medium bowl, stir together the sugar, milk, oil, egg and vanilla. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.
In a small bowl, toss together the strawberries and the 2 tablespoons of flour to coat the strawberries. Fold the floured strawberries gently into the batter.
Pour the bread batter into a greased 9"x5" bread pan. Bake at 350 degrees for 50-55 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely.
To make the glaze, combine the powdered sugar, melted butter, diced strawberries and extract in a small bowl. Mix until it is smooth.
Once the bread is cool, spread the glaze on top of the bread. Slice and serve.

Notes
*I often add an extra teaspoon of vanilla or almond extract to the bread batter (along with the wet ingredients) for an extra boost of flavor. I do this especially if I'm not putting the glaze on top. The bread has the most flavor when you add the strawberry glaze!
*We have added up to 2 1/2 cups of diced strawberries to the batter. The bread stays together the best when you use about 2 cups.
**We like the strawberry bread as written, but if you'd like a higher rise on the bread, reduce the baking powder to 1 teaspoon and add 1/2 teaspoon of baking soda. This will change the texture slightly, but some like it a little better.
**We didn't need any milk or cream to make the glaze spreadable, but it may depend on the juiciness of your strawberries. The glaze will be very thick and look like it is not mixing up, but if you keep mixing, it should create a nice creamy pink glaze as shown below. If it doesn't, add milk or heavy cream 1 tablespoon at a time. The glaze will soften as it sits too since the sugar pulls out juices from the strawberries. Keep this in mind when adding milk and don't add too much! - Garrett Farms - Kentucky.

INGREDIENTS
6 tablespoons extra virgin olive oil
1 medium onion, chopped (about 1 1/2 cups)
3 large garlic cloves, minced
2/3 cup fresh parsley, chopped
1 1/2 cups of fresh chopped tomato (about 1 medium sized tomato) OR 1 14-ounce can of whole or crushed tomatoes with their juices
2 teaspoons tomato paste (optional)
8 oz of clam juice (or shellfish stock)
1/2 cup dry white wine (like Sauvignon blanc)
1 1/2 lb fish fillets (use a firm white fish such as halibut, cod, red snapper, or sea bass, or maybe even GOO), cut into 2-inch pieces
Pinch of dry oregano
Pinch of dry thyme
1/8 teaspoon Tabasco sauce (or more to taste)
Freshly ground black pepper to taste
Salt to taste
METHOD
1 Heat olive oil in a large thick-bottomed pot over medium-high heat. Add onion and sauté 4 minutes, add the garlic and cook a minute more. Add parsley and stir 2 minutes. Add tomato and tomato paste, and gently cook for 10 minutes or so.

2 Add clam juice, dry white wine, and fish. Bring to a simmer and simmer until the fish is cooked through and easily flakes apart, about 3 to 5 minutes. Add seasoning (oregano, thyme, Tabasco). Add salt and pepper to taste. Ladle into bowls and serve.

Great served with crusty bread for dipping in the fish stew broth.

~ Slow Cooker Ham and Potato Soup

INGREDIENTS:

8 cups russet potatoes, diced
1 yellow onion, diced
2 large carrots, peeled and chopped
1/2 cup chopped celery
16 ounce Cubed Ham 2 packages of packages Smithfield Anytime Favorites™ Cubed Ham
1 teaspoon Kosher salt
1/4 teaspoon fresh cracked black pepper
1/4 cup flour
4 cups chicken broth
1 1/2 cups heavy cream (you can also use milk – I used whole milk)
½ cup sour cream

INSTRUCTIONS:

1 ) Add the potatoes, onion, carrot, celery, ham, Kosher salt, pepper chicken broth to your slow cooker and cook on low 7-8 hours, or high 4-5 hours.
2 ) Using a potato masher, mash about 1/3 of the potatoes (don’t worry the ham won’t really mash that much)
3 ) Add the flour, heavy cream/milk and sour cream and stir everything together.

Cover and cook on high for an additional 15 minutes.

Yield: 8 servings, Amount per serving: 386 calories, Calories: 386g, Carbohydrates: 34g, Protein: 15g, Fat: 21g, Saturated Fat: 12g, Cholesterol: 98mg, Sodium: 1496mg, Potassium: 793mg, Fiber: 2g, Sugar: 2g, Vitamin A: 745g, Vitamin C: 18.2g, Calcium: 75g, Iron: 2.1g

~ My! youngest brother told me about a *Milk - Cake* recipe, baked it with blueberries on 1 of those days whilst there 'visitating'... had the corner - piece fresh right out of their oven ... going to go try baking some with this here Mr. Food recipe even though i do not have blueberries on hand, but, i do have some blackberries though, don't rightly know if i am going to use them here ... hmmm Confused

What You'll Need:

4 eggs
1 1/2 cups sugar
2 1/4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 1/4 cups milk
1/2 cup (1 stick) butter
2 teaspoons vanilla extract

What to Do:

Preheat oven to 350 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.
In a large bowl, beat eggs and sugar until light and fluffy. In a medium bowl, combine flour, baking powder, and salt, then gradually beat into egg mixture.
In a small saucepan over low heat, heat milk and butter until butter is melted. Gradually add to batter, beating until combined. Stir in vanilla. Pour mixture into baking dish.
Bake 30 to 35 minutes, or until toothpick inserted in center comes out clean. Let cool completely.

Notes:

What's the best way to serve this cake? We recommend dusting it with powdered sugar for a little added sweetness. You can also serve it with fresh berries and whipped cream or a scoop of vanilla ice cream. All of these will complement the classic flavors of the cake!

We love hot milk cake for dessert, but we also think it makes a great snack or even breakfast treat. For a snack, serve it plain or with a dusting of powdered sugar. You can cut it into smaller slices to make the portion size perfect to go along with an afternoon cup of tea or coffee. For breakfast, you could serve this cake with a smear of strawberry jam and a side of fresh fruit. It's a sweet and delicious way to start the day! - copied.

~ Easy Chocolate Chip Cookies
Ingredients:
3 sticks real butter
1 c sugar
1 c packed brown sugar
3 eggs
2 tsp vanilla extract
3 c flour
1 1/2 tsp baking soda
3/4 tsp salt
4 c semi-sweet chocolate chips
walnut pieces (optional)
How to make it :
Heat oven 375. In large bowl mix butter and both sugars till they are creamy. Add eggs and vanilla and beat till light and fluffy.
Mix flour, salt and baking soda. Then gradually add flour mixture. Then add chips and nuts. use a small cookie scoop to put on pan sheet. Cook 8- 10 minutes. (Until lightly browned) makes about 50. Razz
